Biodynamic Piedmontese White Wine

This wine is outstanding in terms of longevity and it undergoes a gradual olfactory evolution in coming days, if opened, and in the years to come, if stored.
The 2019 vintage’s passage into oak barrels is delicate and maintains the varietal characteristics of the Cortese vine.

The soil

Our Pisé comes from one of our oldest vineyards. It's located approximately 300 m.a.s.l. in a hill with South, South-West exposure which is particularly suited for the Cortese grape variety. The red soil is well drained and sandy, limits the vigorous canopy, the production of each vine and allows the grapes to obtain extraordinary quality. According to biodynamic principles, the vineyards are only treated with moderate doses of sulphur and copper. Restoring the soil with manure aims to have a better microbiological and nutritional balance, ensuring deep soil fertility.

Grapes

The grapes for the Pisé are selected and harvested towards the end of September. They present a great set of aromas, good sugar and acidity, which are crucial qualities to produce a long-lasting delightful white wine with remarkable structure.

Winemaking

After gently pressing the grapes, the static settling of the grape occurs at a low temperature. The limited contact with oxygen and the attention during the transformation steps contributes to magnifying the original characteristics of this grape variety and the terroir's: fruitiness and flavors. The alcoholic fermentation takes place in 25 HL Stockinger barrels, and stays on the lees for 12 months. Then the wine is transferred in stainless steel tanks where it finishes its sur lies maturation, at a controlled temperature for 12 months. In conclusion, the Gavi Pisé is bottled and after 6 months it's released on the market. Theextended time sur lies, a technique which characterises this cru since its first vintage in 2005, make for a long-lasting wine capable of evolving both in the bottle and in the glass. The gentle aging in wood, which has been introduced from the 2018 vintage, further improves its nose complexity and structure highlighting all the varietal cha- racteristics of the Cortese grape.

Tasting notes

Colour: brilliant light straw yellow with subtle hints of green.
Aroma: broad and intense, with complex nose, floral notes complemented by ripe fruit, pear, honey, and notes of vanilla.
Mouthfeel: very rich, warm and harmonic, with a moderate but present acidity. Savoury with a persistent and concentrated finish.
Evolution after opening and service: once the bottle is open, the wine can be preserved for 4/5 days. During this period a very slow evolution is observed, jumping from fruity and floral notes to mineral and citrusy ones.
Bottle ageing: the same evolution is noted as years go by. This vintage will have more notes of vanilla, compared to the previous one.
Alcohol Content: 12,5%

This wine contains sulphites. We ensure the use of sulphites is deliberately well below Demeter and Organic certification standards.

Perfect pairing

Excellent with all seafood which complements its saltiness and fresh delicacy. It pairs perfectly with vegetable risotto and aged cheese.
Best served between 11° and 13° C.

Perfect storage

If stored in a cool dry place and in the dark, at 10°/18° C, bottles will last for over 10 years.
